If you frequent Pinterest you’ve probably become quite aware of the overnight oats trend. They’re easy, healthy, and housed in the ever swoon-worthy mason jar. To get into the Autumnal spirit I made these amazing (and super easy) skinny pumpkin overnight oats.
These pumpkin oats are about 210 calories per serving (depending on what toppings you add on), packed with protein and super filling. This recipe makes 2 servings, so treat your roomie, beau, or hubby to their new fav Fall breakfast. Here’s how to create ’em!
Ingredients
- Rolled Oats
- Almond Milk
- Nonfat Vanilla Greek Yogurt
- Pumpkin Puree
- Pumpkin Pie Spice
Begin by layering 1/2 cup of rolled oats in a mason jar (…any container will do, but how cute is the mason jar?)
Next add 1/2 cup of nonfat vanilla Greek yogurt*, 1/2 a cup of almond milk, and follow with a few teaspoons of pumpkin puree. I added about two heaping spoonfuls, but add to your personal taste! I repeat these steps to create a second layer of each ingredient.
*(Trader Joe’s actually has pumpkin flavored Greek yogurt right now if you want an additional punch of pumpkin.)
Next, place that bad boy in the fridge! Get some rest and wake up to the yummiest breakfast…
When I wake up I like to sprinkle with pumpkin pie spice and add sliced bananas…
TA-DA! All done, and with very little effort! You can also add chia seeds or flax seeds and for added sweetness try agave or a little brown sugar. Personally I think the banana and yogurt add plenty of sweetness though. Enjoy and let me know what you think! I’m sure there will be lots more pumpkin recipes coming your way before Fall is over. 😉
